(Normally we have romaine lettuce just for better nutritional value but my sweet hubby picked out this :)

This is absolutely my favorite dressing recipe. It doesn't have tomatillos in it like a lot of other ones do which makes it less expensive but it still has amazing flavor to it and you will love it. The only downside in my opinion is that it doesn't store very long and you can't really freeze it. The lime juice tends to curdle all the ingredients so if you don't eat the rest after a couple of days, discard it...or just make a half recipe!
Cilantro-Lime Dressing
1 (1-oz) packet ranch dressing mix
1 C. mayonnaise
1 C. sour cream
1 (3-inch) jalapeno pepper, cut and seeded (sometimes I just use the jalapenos in a jar and sometimes I skip this all together for the kids and it still turns out wonderful!)
2 T. chopped onion
1/3 C chopped cilantro
Juice of 1 lime
Blend all ingredients in a blender! That's it! I like to make this a little beforehand to stick in the fridge and get really cold until it is time to serve.
Hopefully your pork is in the slow cooker and has been cooking for about an hour now! Doesn't it smell so yummy?? When your pork is ready to serve, you are going to cook the tortillas, or use the store bought ones. Then start the rice, it takes about 14 minutes if you bought my Jasmine rice. Then take your corn and your black beans out of the cans, rinse them very well and microwave them just until warm and add a little bit of lime juice to each. Okay, you're almost there, chop up a tomato and avocado if you want to add those in there too. Now you are ready for assembly. Put your tortilla down in a large bowl, then add your meat, beans, corn, and rice. Add your lettuce and toppings such as the avocado, tomato and dressing and there, you are ready to eat! I will be back later to post pictures when we are all done getting ours ready for assembly, I just wanted to get something on here for now so you guys could finish things up if needed :) Enjoy!!
